If you have an ice cream maker and the ability to get your hands on a bag of frozen blueberries, you absolutely must try this!
2 1/2 cups blueberries (a tick more, if you want!)
3/4 cup sugar
1 cup whole milk
1/4 tsp salt
2 Tbs lemon juice
dash of cinnamon (optional)
Combine the blueberries and sugar and heat until the blueberries release some of their juice and the sugar dissolves. You can either then puree this in a blender or leave it as is. Add the lemon juice to this.
Combine the milk, salt and cinnamon in another bowl. (You can also put the salt and cinnamon in with the blueberries. JUST DON"T PUT THE MILK AND LEMON JUICE TOGETHER YET! You will get curdled milk, not a delicious frozen treat)
Set up and turn on your ice cream maker. Pour in the blueberry mixture and follow that with the milk mixture. Let the ice cream maker do it's work (check the manufacturers directions) It is best to eat this straight from the ice cream maker without packing and freezing it. It's consistency should not be hard, but rather mushy.
Voila. You have just made incredible Gellato!
